Quick & Easy Yogurt Parfait

One of my favorite breakfasts is a Fruit & Yogurt Parfait.  Somehow it seems like more of a treat than just yogurt with a piece of fruit on the side and the flavor combos are endless.

Today I made a fairly basic parfait using Oiko's Organic Plain Greek Yogurt, 1/2 banana, 1/4 Organic Gala Apple and a few Strawberries.

This can really be made in any container.  I invested in a small parfait container from Pier One Import for less than 3 bucks.  It's the perfect size and it does wonders for the presentation.

Layer about half your yogurt in the bottom and top with half of your fruit.

I like the dice up the fruit pretty small.  That way you get a little bit of everything in every bite.

Then top with the remaining yogurt and fruit and you're done!

Well...almost done.  I like to top mine with 1 TBS ofground flaxseed.  It adds fiber, omegas and adelicious nutty flavor.  I'm totally addicted to flax in my yogurt.  I definitely urge you all to try it! (just make sure you mix it all together before eating it or the flax will feel powdery in your mouth)
